Easter Recap

Happy Monday! I hope everyone had a lovely weekend! I am exhausted today after hosting my first real dinner party in my apartment yesterday! It was really fun to pull out the fancy tablecloth and set a proper table, and of course to spend the day cooking! And then eating!

Easter is one of my favorite holidays, mostly because it signifies the true start of Spring. So I really wanted to celebrate that! I tried to keep things fairly simple, but of course ended up going a little overboard. The table was a theme of blues, pinks and greens. I folded the napkins into cute rabbit ears and used hard-boiled eggs as placecards- then used napkin rings to prevent them from rolling off the plate. The result was whimsical but elegant:

For the food, I probably bit off a little too much to try to cook AND serve in my tiny kitchen. I went with a nontraditional choice of Brisket over an Easter Ham- but it ended up being a huge success. And everyone LOVED the chocolate Mouse- with freshly made whipped cream and raspberries.

As you can imagine we were STUFFED by the end but it was all so worth it and the festivities lasted late into the night. Once everyone had gone I had a little time to unwind- finishing up the wine and tidying up the kitchen. I’m not gonna lie that the triumphant feeling at the end of the night is very addictive- I can’t wait until my next excuse to plan a party.

Easy Entertaining: Yogurt Cucumber Dip

OMG Friday. This has been a looooooooooooooooooong week for me- but I’m excited for the weekend and especially the Oscars! Will you be watching?? I’ve been thinking about inviting a few friends over to watch so I tested out a few quick snacks to make. This yogurt cucumber dip is AMAZING if I do say so myself!  A little bit tangy a little bit sweet, crunchy and creamy all at the same time. Start to finish it took about 10 minutes to whip up- it is so easy!

Yogurt Cucumber Dip

What you need:

  • 14oz Greek yogurt (I used Fage)
  • Zest and juice of one lemon
  • 2T chopped parsley
  • 2T chopped mint
  • Medium cucumber
  • Pomegranate seeds
  • salt and pepper

Put the yogurt in a bowl. Add lemon, parsley and mint. Peel the cucumber and scrape out the seeds using a spoon- chop to small cubes and add it to the dip. Stir everything all around and add salt and pepper to taste. Transfer to a serving bowl and sprinkle with pomegranate seeds. Serve with pita chips.

Easy Entertaining: Bosc Pear with Goat Cheese and Honey

Happy Friday! We made it! Any big plans for this weekend??? Nick and I have a few parties I’m looking forward to and I heard there are some big football games this weekend? just kidding. I may not be the biggest fan, but its pretty impossible to avoid football when living in New England.

Today’s “easy entertaining” I discovered on Bon Appetit as part of their Food Lover’s Cleanse. So its not only easy- its healthy too! Who said that big foodie magazines only have difficult fancy recipes???? This one is so easy you may have already figured it out from the title of this post- or the picture.

Bosc Pear with Fresh Goat Cheese and Honey

What you need:

  • Bosc Pear
  • 1 oz goat cheese
  • 1/2 T honey

Thinly slice 1 bosc pear, spread the goat cheese on each slice, drizzle with honey. Repeat. Serve.

If thats not easy peasy I don’t know what is! If you want to kick it up a notch, try adding some toasted hazlenuts or maybe a sprinkle of nutmeg. Change up the goat cheese with ricotta or blue cheese for different flavors. The pear provides a great canvas and I think the opportunities are endless!

Easy Entertaining: Charcuterie Plate

Is there anything better in life than cheese and cured meats? I challenge you to find it… Last night I went out to dinner with one of my girlfriends and we shared an amazingly enjoyable plate of charcuterie, cheeses and spreads. Which got me thinking- how EASY is it to put one of these together? I think, my friends, easy enough to present here as easy entertaining.

The art of charcuterie dates back to the Roman Empire- it originally was a method of preserving meat. But after the advent of the refrigerator, we kept these recipes around because they taste just so darn good! The selections range from  salami and bacon to pates and rilletes. Two of my favorites? Coppa and Soppresatta.

This post is a bit of cheat, because really, there is no cooking involved in putting together a great platter. Assuming that you have these things on hand, I can’t think of a quicker dish to put together for guests. Select a few meats, a few cheeses- its hard to go wrong.  But, just in case you get overwhelmed by the choices, I’ve come up with this fool proof guide:

Easy Entertaining: “Nun’s Farts”

I think I’ve done about 10 “easy entertaining” recipes- and I think its high time I try sharing a quick dessert. These “nun’s farts” are inspired by a recipe from Canal House- one of my favorite seasonal cookbooks. (and they were inspired by the NY restaurant Daniel, who were in turn inspired by German street food) They are essentially a donut hole crossed with the eggy dough of a popover. Oh, and then I rolled them in cinnamon sugar. Tell me that you have a guest that would turn away this warm homemade goodness at the end of the night. In fact, I think it would be a crime to say you don’t like them. Pair them with a Ciderhouse Whiskey and we’ll really have something you can’t refuse.

Now, I always thought donuts were on a pedestal in the culinary world- up there with macarons as one of the most difficult things to make EVER. Well I certainly was WRONG. I made  these once and have already memorized the recipe, they took me about 20 min to whip up from start to finish and are quite easy- and quick to clean up! The other plus is that you most likely have all of these ingredients lying around the house already- so no extra trips to the store when you are rushing to get ready for guests :)

“Nun’s Farts”

What you need:

  • 3 Tbs butter
  • 1 cup water
  • pinch salt
  • 1/2 cup all purpose flour, sifted
  • 2 eggs
  • 1tsp vanilla or bourbon (optional)
  • Canola oil
  • 2 cups sugar + cinnamon to taste

Add the butter water and salt to a saucepan on the stove on medium heat. When the butter is melted and the water is boiling, take off the heat and add all of the flour at once. Stir until the flour is completely incorporated and return to the heat for another minute or so- the dough will start to ball up. Remove from the heat again and beat in the eggs one at a time. If you want a slight flavor- add the vanilla or alcohol now. Stir until the dough balls up again.

Now is the fun part. Fill a deep pot with 2″ canola oil heated to 275 degrees. Drop about a tablespoon of the dough into the oil (I used a small ice cream scoop- it was very effective). Don’t worry about them being perfectly round.  The dough will sink to the bottom in an amazing bubbling sound- then will rise and grow to twice their size. Don’t overcrowd the pot. Keep turning the dough until it browns on all sides- it takes about 5-10 minutes. Next take them out of the oil using a slotted spoon and rest them on a wire rack set over some paper towels. Once they are “dry” drop them in the cinnamon sugar and roll them around.

Serve warm. Try to hold back from eating all of them yourself.
